The boss

Based in Sydney, Australia, I joined Shriro in 2012 and part of the Everdure team since 2015.

The business

Everdure, a brand with roots tracing back to 1935 in Australia, is owned by Shriro Australia, part of Shriro Holdings.

In 2016, Everdure joined forces with chef Heston Blumenthal to create a line of gas and charcoal BBQs, under the brand name Everdure by Heston Blumenthal.

The influence

After emigrating from Ireland to Australia, my deep fascination with the art of barbecuing was sparked. The Australian climate, perfectly conducive to outdoor cooking, lit a fire within me, particularly when it comes to barbecuing over charcoal after a long day at the office, cooking over an open fire.

This combination of culinary craftsmanship and the embrace of the Australian BBQ culture has become a true passion of mine, allowing me to fully immerse myself in the joy of the outdoor cooking experience.

The equipment

During the week, I rely on the Everdure FORCE as my go-to BBQ. It’s built tough with high-quality materials, so you know it’s going to last. With two burners and a spacious cooking area, this barbecue heats up evenly and fast and the precision flame control knobs let you dial in the perfect temperature.

At the weekend with more time to spare, I switch things up with the Everdure HUB – a charcoal barbecue that’s all about convenience and flavour and with the fast flame ignition system a game-changer.

The meal

Nothing beats the mouth-watering delights of perfectly cooked steaks over charcoal.

My favourite simply involves adding a sprinkle of salt and a touch of oil and ensuring that the BBQ is piping hot. Following Heston Blumenthal’s expert advice, I flip the steak every 15-20 seconds. It’s important to cover the steak and allow it to rest on a raised trivet before serving. This method allows the steak to develop a crisp and flavourful exterior, while maintaining a tender and succulent centre, never risking overcooking.
