Brown crab & shrimp bok choy

We love potted shrimp. These tasty little fellas smothered on thickly buttered toast are one of our favourite snacks. Brown crab, although less visually appealing than white, makes up for it in flavour. You can buy both brown crab and shrimp in most UK supermarkets, and the combination adds salty, savoury notes to the sweet, tender, grilled bok choy.

Ingredients

3 heads of bok choy, cut lengthways into halves 

25g butter

¼ tsp allspice

Pinch cayenne pepper

50g potted brown shrimp 

50g brown crab meat 

1 tbsp chilli oil 

Few sprigs of dill

Red pepper flakes

Method

1. Grill the bok choy until slightly blackened, position with the bulb nearest the coals as they will require more cooking than the tender leaves.

2. In a pan, melt the butter, add the allspice, cayenne pepper, potted shrimp and brown crab. Heat until warm.

3. Drizzle the oil over the bok choy, and top with the shrimp and crab mix, sprinkle with dill and pepper flakes.
