Coronation Chicken Wings

Explore Aston Prideaux's unique BBQ recipe for Coronation Chicken Wings, a novel blend of creamy curry mayo and sweet mango chutney. A real crowd-pleaser!

Ingredients

1kg chicken wings, split into drums and flats

75ml mayonnaise

75ml double cream

Mango chutney

Fresh coriander

Sultanas

Flaked almonds

Black onion seeds

Curry powder mix

1 tbsp turmeric

1 tbsp ground cumin

1 tbsp ground coriander

1 tsp black pepper

1 tsp ground ginger

½ tsp fenugreek

½ tsp kashmiri chilli powder

½ tsp mustard powder

½ tsp ground cardamom

Method

1. Mix all the spices together to create the curry powder mix, mix the mayonnaise 

and the double cream together then add 2 tbsp of the curry mix to make the curry mayo drizzle.

2. Dry off the chicken wings, drizzle with oil and coat with the rest of the curry powder mix.

3. Cook on a BBQ until the wings hit 75°C 

(I used the vortex method this time with the heat in the middle and wings around the outside), then glaze with the mango chutney and cook for another 5 minutes.

4. To finish, drizzle with curry mayo sprinkle with fresh coriander, flaked almonds, sultanas and black onion seeds.
