Grilled avocados with mezcal & lime dressing

Avocados trees grow all over California and their fruits are a big part of everyday meals. Grilling them deepens the flavour, while dousing them in a perfumed mezcal and lime dressing is divine. Next time you make guacamole, try charring the avocados on the grill before mashing them. 

Ingredients

 4 avocados 

60ml orange blossom honey 

60ml extra virgin olive oil 

60ml mezcal 

Zest and freshly squeezed juice of 2 large limes 

Sea salt and cracked black pepper 

Oil, for brushing the grate 

Method

1. Halve the avocados and remove the stones. Leave the skin on. 

2. In a small bowl, whisk together the honey, oil, mezcal, and lime zest and juice. Season with salt and pepper and set aside. 

3. Heat the barbecue to medium–high. Brush the grate with oil. 

4. Place the avocados cut-side down on the grill and cook for about 3–4 minutes until slightly charred and browned. Turn them over and cook for another 2 minutes. 

5. Remove from the grill and place on a platter, drizzle with the mezcal and lime dressing, and serve.
