Halloumi and Avocado burger
Try this delicious vegetarian burger from Ben Forte for Kamado Joe
Ingredients
4 brioche buns, halved
225g halloumi cheese, sliced 1.5cm thick
2 tomatoes, sliced
1 red onion, sliced horizontally
4 lettuce leaves
1 avocado
1 clove of garlic, grated
1 tbsp mayonnaise
1 tbsp Greek yoghurt
1 tbsp lemon juice
Chipotle sauce
Salt and pepper to taste
Method
1. Sear the halloumi on the soapstone at 160°C until brown and crispy. In a small bowl, mash the avocado with a fork, add the garlic, mayonnaise, yoghurt, lemon juice and seasoning and mix well until thoroughly combined. Set aside.
2. Toast the brioche buns on both sides on the grill until golden brown. Spread the avocado sauce on the bottom half of the bun and add a lettuce leaf. Place a tomato on each, then add the fried halloumi slices and onion rings on top. Spread with remaining avocado and place the top half of the bun on top.
