Woodfire Christmas cake

By Ninja Woodfire Outdoor Oven

This cake is quick to prepare and cook. TIP: You can skip the smoking; in a bowl, mix the first 4 ingredients with warmed brandy. Leave to marinate for 1 hour.

Ingredients

serves 10-12

700g luxury mixed dried fruits

150g halved glacé cherries

75g chopped nuts

Finely grated zest of 1 large orange

200ml brandy

200g butter, softened, plus extra for greasing

200g soft light brown sugar

4 large eggs

300g plain flour

1 tsp baking powder

1 tsp mixed spice

Method

1. In a ovenproof large bowl, place fruit, cherries, nuts, orange zest and brandy. Mix together.

2. Install the Accessory Frame in the bottom level of the Ninja Woodfire Outdoor Oven and place Pro-heat Tray on rack. Turn the dial to select BAKE. Press WOODFIRE FLAVOUR. Set the temperature to 145°C and the time to 30 minutes. Select START/STOP to begin preheating (preheating will take around 9 minutes).

3. When the unit is preheated and ADD FOOD is displayed, open the door and place the bowl on the tray. Close the door to begin cooking.

4. Grease and double line a round Ninja cake tin or a 23cm round cake tin.

5. When cooking is complete, open the door and remove the fruit.

6. In a large bowl, cream softened butter and brown sugar together until pale and light in colour. Add the eggs with 1 tablespoon of flour, one at a time and beat well between each addition.

7. Sieve the remaining flour, baking powder and spice into the bowl. Fold in with the smoked fruit and liquid.

8. Spoon cake mixture into the prepared Ninja Foodi Zerostick 22cm round tin; using the back of the spoon, smooth and level the cake top.

9. Turn the dial to select BAKE, set the temperature to 150°C and the time to 2 hours. Select START/STOP to begin preheating (approximately 4 minutes).

10. When the unit is preheated and ADD FOOD is displayed, open the door and place cake on the tray. Close door to begin cooking.

11. When cooking is complete, open the door and test if the cake is fully cooked by inserting a cocktail stick into the centre of the cake. If it comes out clean, the cake is cooked. Leave the cake in the tin for 45 minutes before transferring to a wire rack. Decorate as desired.
