Rubs & Sauces

Issue 13 | Autumn 2023 | USA Special with Hickory’s Smokehouse

Plenty of global BBQ inspiration is born in the USA, especially when it comes to rubs and sauces. We take the temperature of three UK companies spreading the love.

ANGUS & OINK

Sweet Bones & Butts

Our flagship product is inspired by the classic American BBQ rubs – great on a juicy pork shoulder, ribs and chicken.

Pigasus

Bacon, honey and jalapeño. The jalapeño cooks out perfectly leaving a warmth and a background flavour of savoury bacon.

Blues Hog

Sticky and sweet with a little bit of heat. Notes of vanilla and tamarind run through this sweet sauce.

BBQ Pit Boys – SPG

We’re subscribers to the BBQ Pit Boys YouTube channel and met them when A&O competed at the Jack Daniel’s World Championship. High quality ingredients, versatile and full of flavour.

Bad Byron’s – Butt Rub Byron

We were lucky enough to visit Butt Ranch in 2018 and experience some amazing hospitality from the main man Byron Chism. This is an all-purpose rub and has no added sugar.

Killer Hogs – The BBQ Rub

If you follow the US BBQ scene, then you’ll know Malcolm Reed, a great inspiration to many and understand why his Killer Hogs BBQ brand is hard to keep on our shelves.

LUMBERJAXE

Backyard BBQ Rub

The beginning of our story, a culinary dream for a BBQ enthusiast. A mix of paprika, brown sugar, garlic powder, cayenne pepper, and much more. The sweet element takes inspiration from across the Southern states.

Backyard BBQ Sauce

With a mix of honey and molasses, the inspiration from the great state of Kansas is clear. Sweet, sticky, and smoky – perfect on pork burnt ends.

Hot Buffalo Rub

A staple of American BBQ, It creates the perfect blend of sweet and spicy. Due to its versatility, it is excellent on everything from wings to tenders.

Louisiana Hot Sauce

A vinegar based, cayenne blend, with a lime finish, we recommend pouring over wings, or in traditional Cajun cuisine to enhance spice in a crayfish boil.

Louisiana Cajun Rub

A state full of BBQ hotspots, there is no avoiding Louisiana influences. A heavy smoky flavour, the Cajun seasoning is highly recommended on your next salmon.

The T-Bone Rub

A bold and savoury blend from Texas. A flavourful profile consisting of salt, pepper, garlic powder, but also coarser coriander seeds and toasted onions, enhancing the natural richness of a T-bone steak.

FIREFLY

Competition Sauce

We made a thick glossy Cherry flavoured BBQ sauce for the KCBS competition BBQ. It won 1st place in 2019 at the American Royal World Series of Barbecue ‘Vinegar Category’ – the first non-US sauce to ever win. Great on chicken, ribs and pulled pork.

Memphis Red BBQ Sauce

A classic BBQ sauce that is sweet, smoky and rich with tomato, that’s good on everything. This was one of the first sauces we made when we started from home.

Korean BBQ Sauce

Not what springs to mind in American barbecue, but the US is a melting pot of different cultures. Awarded Best International Sauce at the New York Sauce King. Great on chicken, beef, and fish.

Kansas Sweet & Smoky

Another of our original products and a traditional BBQ rub. It is sweet, smoky and works really well on chicken, beef, and pork.

Santa Maria

California-inspired rub that’s different from the more traditional deep south BBQ rubs. It is light and herby with rosemary and parsley. Great on tri-tip, beef, lamb and goat.

Texas Spicy BBQ Rub

Our riff on the classic Tex-Mex profiles. It’s not a sweet BBQ rub. It packs a lot of flavour but not much heat. Great in chilli, beef shin and as marinade mixed with yoghurt.
